Overview of changes:

 *  Ensured log.yaml won't contain unacceptable characters

    Just filter the whole thing, replacing unacceptable characters by �
    (U+FFFD AKA 'REPLACEMENT CHARACTER').

 *  jat__stat() will now treat empty phases properly

 *  Smaller cleanups
